From Arshala's Cookbook: Chicken Noodle Soup Recipe


Oh chicken noodle soup. Is there anything more comforting? 

With so much that goes on in the world, I guarantee that no matter how bad your day is, a big bowl of hearty soup is going to cheer you up. It will warm up your insides and help you to have a great night’s sleep.


Because it keeps so well, you can also give it to your loved ones. If you have a friend who is down and out – chicken soup. Know someone who needs to take time of out of the kitchen, perhaps they’re ill or have just had a baby… chicken soup! The best gift! It’s flavourful, homemade and also – immune boosting.

INGREDIENTS
1 tbsp olive oil
1 onion diced
1 carrot diced
1 celery stalk diced
2 garlic cloves crushed or sliced
2 potatoes peeled and finely cubed
6 cups chicken stock
3/4 cup stelline pasta
500 g roasted chicken meat 1.1lb
1 cup frozen peas
1 tbsp parsley finely chopped
lemon
salt + pepper


INSTRUCTIONS
1) In a large pot on a medium – high heat, bring the olive oil to heat. Add the onion, carrot, celery and garlic to the pot and sauté for 5 minutes or until fragrant and the onion is translucent. Stir often. Add the potatoes to the pot and cook for an additional 2 minutes.
2) Add the stock to the pot and bring to the boil. Once boiling, reduce the heat and simmer for 15 minutes. Bring back to the boil, add the pasta and cook for 3 minutes or until the pasta is plump. 
3) Reduce the heat, add the peas, chicken and parsley to the pot and stir through. Squeeze over some lemon juice and season to taste. Serve immediately.
